		<description>To prep the beets, thoroughly wash and scrub the beets and then twist off the greens and save them for a later use. Cut the top and the bottom off the beet and using a vegetable peeler, gently remove the skin. Yes, the beet juice with slightly dye your hands but I have never had any trouble getting my hands back to normal by just washing them with soap and water and running a little lemon juice over my skin. Once all the beets are peeled, cut them into 1/4 inch thick disks and lay them flat, in a single layer in a large baking dish. Pour the marinade over the beets and let them sit for at least an hour and a half, turning the beets half way through.</description>
